1. Club Cheese Sandwich
An old room-service sandwich recipe that is filling, yummy, and a perfect lunchbox recipe. Here is a slightly modified version of the club sandwich recipe for kids.
You will need:
6 thin slices of smoked bacon
9 slices whole-wheat bread
1 carrot, grated
2 tomatoes, sliced
12 cucumber slices
1 pack of soft cheese (200g)
6 leaves of lettuce
How to:
Grill the bacon for five minutes, turning at least once in between.
Toast the bread slices lightly and remove the crusts.
Mix cheese and grated carrots in a bowl. Spread this mix on six slices of toasted bread.
Top three slices with sliced tomatoes and cucumber and cover them with the remaining three slices. The cheesy side should be down.
Place two slices of smoked bacon on the toasts and cover with the remaining three.
Cut the sandwiches into small cubes and secure them with a toothpick before serving.
2. Caprese Sandwich With Homemade Pesto
The Italian cuisine-inspired sandwich holds with it the wholesomeness of French bread and other ingredients like parsley, garlic, olive oil, and walnuts. Kids are quite likely to find this sandwich delectable.
You will need:
1 loaf French bread
1 tomato (thinly sliced)
3 half slices of mozzarella cheese (fresh)
3 cloves garlic
2 cups parsley
½ cup walnuts
½ cup parmesan cheese
3-4 tbsp extra virgin olive oil
Ground Pepper – to like
Salt – to taste
How to:
Begin by preparing the pesto sauce. Put all the ingredients (parsley, walnut, and garlic cloves) in a blender and blend until the ingredients turn into a smooth paste.
Add olive oil to the paste slowly. Use no more than two-third of a cup of olive oil. Keep blending till the paste gets as smooth as possible.
Transfer the paste into a large bowl and add parmesan cheese, salt, and pepper. Stir them together until the mixture turns uniform.
Slice the bread loaf in half or as many slices you wish. Spread pesto on one side of the bread slice evenly. Add mozzarella cheese and tomato slices on top of it.
Apply pesto on the bread slice that will make the upper half of the sandwich.
Press the two halves together firmly and keep the sandwich on the panini machine or any other sandwich making machine.
Remove the sandwich as the cheese melts and the bread crust becomes crisp.
Serve on a dish with marinara sauce or any other sauce of your kid’s choice.
