1. Classic Potato Salad
You Will Need:
5lb red potatoes, boiled
6 eggs, hard-cooked
2 cup mayonnaise
2 green onions
1 onion, diced
3 celery stalks, sliced thinly
Green bell pepper, diced
Salt to taste
½ tp ground pepper
How To Make:
Bring a pot of water to boil. Peel the potatoes and put them in the water. Let them cook for at least 15 minutes.
Once the potatoes are tender, but firm, take them off the stove and let them cool.
Dice the potatoes and set them aside.
Bring the eggs to boil in a saucepan. Cool them and chop them into small cubes.
Combine the potatoes and the eggs in a large bowl and add mayonnaise, chopped onion and green onion, celery, and green bell pepper.
Season with pepper and salt and mix well.
Cover and refrigerate it overnight or for five hours.
Serve once ready.
2. Creamy Potato Salad
You Will Need:
5 potatoes
¼ cup apple juice
1 cup creamy salad dressing
1 tablespoon minced green onion
¼ cup creamy salad dressing
1 tsp prepared mustard
1 tsp dried dill weed
Salt and pepper for seasoning
How To Make:
Peel and boil the potatoes. Once they cool, dice them into small cubes.
In a bowl, put all the ingredients for the salad dressing and whisk them into a creamy mixture.
Pour the creamy mixture over the potatoes and mix them again. Make sure that the potatoes don’t get mashed.
Serve fresh.
