You Will Need:

4 potatoes, large
1 tbsp garlic, minced
1/8 cup olive oil
½ tbsp oregano, dried
½ tbsp parsley
½ tbsp crushed red bell pepper flakes
½ tbsp dried basil
½ tbsp dried marjoram
½ tbsp dried dill weed
½ tbsp thyme
½ tbsp salt, or to taste
How To Make:

Prepare the oven by preheating it to 475 degrees F (245 degrees C).
Peel and dice the potatoes.
In a bowl, combine olive oil and the herbs – basil, oregano, parsley, pepper flakes, marjoram, dill weed, and thyme. Add salt.
Add the potatoes and stir until they are evenly coated with the seasoning.
Arrange the potatoes on a single layer baking sheet or a roasting pan, which is microwave usable.

You Will Need:

16 potatoes, well-shaped
2 tbsp flour
150g duck fat or goose fat dripping
2 tbsp vegetable oil
Salt to taste
How To Make:

Heat the oven to 190 degrees C.
Peel the potatoes and cut them in half. If you think the pieces are too big for kids, cut them into quarters.
Boil the potatoes in a covered saucepan for about two minutes. Do not oil any more than that.
Toss them in the colander, drain the water and fluff them, while sprinkling flour over them.
Put a large roasting pan on high heat and add the fat and oil. When the oil is hot enough, lower the potatoes and let them fry for five minutes, or until they are all brown and have oil on all the sides.
Roast these potatoes for 20 minutes in the preheated oven. Remove and turn them using a fish slice. Put the roast tray on high heat for a minute and put it back in the oven for another 20 minutes.
Turn them again and roast in the oven for the last time, for another 20 minutes.
